Salad

1 pint fresh, organic strawberries (approximately 2 cups sliced)

8 ounces fresh organic baby spinach, washed, dried and torn

Dressing

1 tablespoon sesame seeds

1/2 tablespoon poppy seeds

1 scallion, chopped

1 tablespoon flax seed oil

2 tablespoons balsamic vinegar

1 tablespoon extra-virgin olive oil

1/4 cup chopped raw walnuts for garnish

 

Directions

Put prepared spinach in a large salad bowl. Cut berries into slices and arrange over the spinach.

Combine dressing ingredients in blender or food processor, except for olive oil, and process until smooth. With blender or food processor on low speed, slowly drizzle in the olive oil until well blended.

Pour over salad and toss or serve on the side.

Garnish with chopped walnuts as desired.

You may add pear or apple and goat feta cheese to this combination for a tasty alternative!
